Hold the mayo! Try this healthy twist on traditional deviled eggs for a delicious protein-packed snack. We used avocado and olive oil to add some healthy fats and fantastic flavor, making these cilantro avocado deviled eggs the perfect “clean” snack.
- 12 hard boiled eggs
4 cooked yolks
1-2 t olive oil
juice from 1 lime
pinch of salt
2 T finely chopped cilantro
cayenne pepper (garnish to taste)
Hard boil your eggs. (If you are a novice at egg boiling, watch this tutorial from Real Simple — you’ll be an expert in no time.) Let the hard boiled eggs cool. Peel them carefully and slice them in half. Take 2 of the cooked yolks and place them in a mixing bowl. Add the avocado, lime juice, olive oil, cilantro and salt. Mix with a fork until smooth. Scoop a spoonful of the mixture into the halved egg whites. Garnish with cilantro and a dash of cayenne pepper.
